Beluga caviar is one of the finest and most valuable of all black caviars in the world. Found primarily in the Caspian Sea and Black Sea Basin, the Beluga is a large fish that belongs to the Sturgeon family. The River Beluga is fresh water fish and spawns on the Volga River, Aral Sea and Don in Russia.
Our top-class river beluga caviar has the same dark gray to black color as the wild Caspian beluga caviar, which are now critically endangered. With each egg reaching up to 3.5mm in size, the large pearls have a distinctive firmness yet they feel succulent the instant it touches the tongue. As it melts in the mouth, the firmness is translated into a soft, creamy buttery texture, that any discerning palate can identify as luxurious consistency.
The naturally rich flavors of the roe are enhanced and preserved by the malossol process, which involves adding about 3-5% salt, giving the caviar a slightly salty taste that compliments the naturally spicy and slightly bitter taste of the roe. The combination of flavors makes for an exquisitely delicious and exclusive gastronomic delight. The rich, delicate flavors that emerge once the pearls burst in the mouth leave a pleasant and lasting impression on the tongue.
